Kimchi Cabbage Cups
This raw dish features an easy to blend sauce made in the Personal Blender II.
Sauce Ingredients
1/2 cup tahini paste
1/2 cup lemon juice
1/4 cup cilantro
1/4 cup green onions
1 tsp sea salt or miso paste
Filling Ingredients
2 cups diced cucumber
1 cup chopped napa cabbage
1 cup chopped cauliflower
cilantro for garnish
6 napa cabbage pieces
1 cup kimchi
Directions
- In the blender, blender all sauce ingredients until well-mixed.
- In a mid-sized mixing bowl, toss together all filling ingredients, except for the cilantro, 6 napa cabbage pieces, and kimchi
- Layer 2 Tbsp of sauce followed by 1/2 cup of filling into cabbage cups.
- Top with kimchi and fresh cilantro.
- Enjoy fresh or save for up to 3 days in the refrigerator!
