Elote Salad
This salad features a special dressing created in your juicer! This one we know you will LOVE if fresh herbs and citrus tempt your tastebuds. Create a double batch of the dressing for great results all week long. This one saves well in the refrigerator for up to 7 days.
Dressing Ingredients
4 limes
½ green apple
1 cup cilantro
½ cup olive oil
1 tsp sea salt
Salad Ingredients
6 cups raw corn kernels, freshly cut off the cob
2 cups sliced baby tomato
2 cups diced cucumber or avocado (optional)
¼ cup chopped red onion
¼ cup chopped fresh cilantro
Garnish Ingredients
1 cup cashews
½ cup water
¼ cup lemon juice
1 tsp sea salt
1 pinch cayenne pepper (optional)
Directions
- Begin by juicing the dressing: limes, green apple and cilantro.
- Mix the juice with the olive oil and sea salt by whisking together well.
- In a small blender, combine the garnish ingredients, save cayenne, and blend until smooth.
- In a mid-sized bowl, toss the salad ingredients and the dressing well.
- Layer in your favorite side bowls and top with the garnish sauce and any cayenne pepper or other spicy seasonings.
