Juice Pulp Veggie Crackers
We're obsessed with the tried and true Greenstar for making amazing fresh juice. And you don't have to toss the pulp! Did you know that you can use it to make crackers with simple ingredients? Plus, They're vegan, gluten-free, and packed with fiber.
Ingredients
1 cup juice pulp
2 Tb tahini or almond butter
2 tsp ground flax seeds
2 tsp hemp seeds
2 tsp nutritional yeast
1/8 tsp garlic powder
1/4 tsp sea salt
1 tsp olive oil
1 tsp maple syrup or agave (optional)
sesame seeds (optional)
Directions
- In a large bowl, combine your juice pulp with all the ingredients and mix well.
- Spread the mixture evenly onto your baking tray, about 1/8 inch thick.
- Score into square shapes with a sharp knife or pizza cutter.
- Bake at 350°F for 30 minutes, or until crisp. Keep a close eye on them. They may need an extra 10-15 minutes*. However, be careful not to overbake them.
- For the best flavor and texture, enjoy these pulp crackers fresh on the day you bake them. Or store them in an airtight container for up to 5 days.
*Note
Baking time can vary depending on how wet your pulp was.
