Sweet Potato Spooky Pasta
This Halloween pasta is a fun and spooky meal, ideal for fueling up before a night of Trick-or-Treating.

2 purple sweet potatoes

8 cremini mushrooms

2 cloves garlic, minced

marinara or your favorite pasta sauce
Directions
- Spiralize the sweet potatoes in the Shine Electric Spiralizer using the spaghetti blade.
- Carve your mushrooms into a skull form: Slice the mushrooms in half. Poke two holes with a straw for the "eyes". Use a toothpick to create recessed lines for the "nose". Then carve the "teeth" with a paring knife.
- Heat oil in a large pan on medium heat. Add minced garlic and sauté for 30 seconds.
- Toss in the sweet potato noodles and mushroom skulls. Sauté 3-4 minutes, stirring frequently until the noodles are al dente.
