Butternut Squash & Carrot Noodles with Balsamic Sauce
Discover a new way to enjoy butternut squash and carrots! Spiralize them into noodles and dress them with a sweet balsamic sauce for a surprisingly delicious dish.
Balsamic Sauce Ingredients
4 Tb vegan butter or olive oil
2 Tb balsamic vinegar
1 Tb tamari
1 Tb maple syrup
2 cloves garlic, minced
1/4 tsp black pepper
1/8 tsp sea salt
2 tsp dried thyme (optional)
Noodle Ingredients
1 butternut squash
2-3 carrots
1/4 cup frozen peas
Directions
- Spiralize butternut squash and carrots in the Shine Electric Spiralizer using the ribbon blade.
- In a pan, heat the balsamic sauce ingredients on medium heat for about 2 minutes
- Toss in spiralized noodles and frozen peas, stirring frequently for 6-8 minutes until tender.
- Enjoy and serve!
