Yellow Squash Noodles with Lemon Garlic Sauce
Squash noodles tossed with a bright lemon garlic sauce for a light, flavorful meal.
Lemon Garlic Sauce Ingredients
4 Tb vegan butter
2 Tb olive oil
4 cloves garlic, minced
2 Tb lemon juice
2 Tb nutritional yeast
1/4 tsp sea salt
1/4 tsp black pepper
Noodle Ingredients
3 yellow squash
8 oz cremini mushrooms
flat leaf parsley, chopped
Vegan Parmesan Cheese Ingredients
Add these ingredients to a food processor and pulse into a crumb.
1/4 cup raw cashews
1 Tb nutritional yeast
1/4 tsp salt
pinch of garlic powder
Directions
- Spiralize yellow squash in the Shine Electric Spiralizer using the fettuccine blade.
- Heat cooking oil in a pan over medium heat. Add the mushrooms and a pinch of salt. Sauté for 5-7 minutes. Remove from pan.
- In the same pan, heat butter and olive oil over medium-high heat. Stir in garlic and cook, stirring constantly, for 30 seconds. Turn off heat.
- Add the lemon juice, seasoning, sautéed mushrooms, and spiralized noodles to the pan. Toss until well-coated.
- Serve on a plate. Sprinkle parmesan cheese and chopped fresh parsley, if preferred. Enjoy!
